Each year, you and I throw away about four kilograms of potatoes. That's roughly 70 million kilograms of potatoes across the Netherlands. Yet, even if they're past their official expiration date, they're often still perfectly fine to eat. These sad spuds work wonders in a hearty mash!
How to Make It
- Peel 400 grams of potatoes, cut into quarters, and place them in a pot.
- Add water to the pot until it's about 1 centimeter above the potatoes. Boil for 20 minutes, or until they're easily pierced with a fork.
- Meanwhile, heat 125 ml of (plant-based) milk with the mix of apple and onion for about 5 minutes. Do NOT bring to a boil.
- Drain the potatoes, mash them until smooth, add the milk mixture, and season with salt, pepper, and optionally a knob of butter.
