Simple & summery salad for the BBQ

Summer means outdoor dining, long evenings, and...barbecuing, of course! But let's be honest: it's not all about what's on the grill. A surprising salad can elevate your entire BBQ. And no, we're not talking about your standard potato or pasta salad.
Below, we're sharing a recipe that's just right: easy to make, packed with flavor, and just a little bit different. With seasonal vegetables, a homemade vinaigrette, and a twist your guests won't see coming.
Summery tomato and fig salad with fennel and pistachios 🍅
Ingredients (for 2–4 people)
- 3 large beefsteak tomatoes (preferably different colors)
- 4-5 fresh figs
- 1/2 fennel bulb, finely chopped
- 2 tablespoons unsalted pistachios, coarsely chopped
- Fresh oregano or basil
- Coarse sea salt and black pepper
Here's how to make it:
1. Cut the tomatoes into thin slices and arrange them in a fan shape on a plate.
2. Cut the figs into wedges and divide them over the tomatoes.
3. Slice the fennel very thinly or use a mandolin. Sprinkle this over the salad.
4. Drizzle your favorite vinaigrette over the salad.
5. Top with pistachios and fresh oregano or basil.
