Simple & summery salad for the BBQ

Summer is all about dining outdoors, long evenings… and of course, barbecues! But let’s be honest: it’s not just about what’s on the grill. A surprising salad can elevate your entire BBQ – and no, we’re not talking about the usual potato or pasta salad.
This recipe is easy to make, packed with flavour, and just a little bit different. Seasonal vegetables, a homemade vinaigrette, and a twist your guests won’t see coming make it the perfect side dish.
Summery Tomato & Fig Salad with Fennel and Pistachios🍅
Ingredients (serves 2–4)
- 3 large beefsteak tomatoes (choose a mix of colours if possible)
- 4-5 fresh figs
- 1/2 fennel bulb, finely sliced
- 2 tablespoons unsalted pistachios, roughly chopped
- Fresh oregano or basil
- Coarse sea salt and freshly ground black pepper
Here's how to make it:
1. Slice the tomatoes thinly and arrange them in a fan shape on a serving plate.
2. Cut the figs into wedges and scatter them over the tomatoes.
3. Slice the fennel very thinly (a mandolin works well) and sprinkle it over the salad.
4. Drizzle with your favourite vinaigrette.
5. Finish with pistachios and fresh oregano or basil.
Tip: Serve with fresh bread, such as rustic sourdough or a baguette, to make it even more summery.
